I’ll admit it. I. Love. Chipotle. It’s an addiction so deep that I’ve considered that I’m not sure I could live somewhere with out one. Unfortunately, I can’t go that often because I have zero self restraint and end up inhaling an entire burrito bowl in about 5 seconds. So I had to do something to curb my cravings, even if it only was to create something that resembled one of their salsas. I decided to tackle the corn salsa. This isn’t an exact replica, as Chipotle’s recipe includes onions and cilantro, but I like to think my little twists are just as delicious. But that’s up to you to decide.
Disclosure-my corn salsa will never be Chipotle corn salsa, simply because I don’t put crack in my recipe. That’s the only reasonable explanation I could come up with.
The thing I love most about this recipe is just how unreasonably easy it is to make. We’re talking a 3 ingredient, 10 minute kitchen extravaganza. Corn (obviously). Poblanos. Red peppers. Done.
If you wanted to get extra crafty, you could add some jalapenos as well, but that’s up to you. Also, whenever you can, use fresh corn. It’s just sooooo much better. I buy those giant bags of frozen organic corn from Costco, and while they are great, you can’t match the crispness of the fresh stuff.

On to the How To’s.
Put them in a pan with a little oil, and roast those delicious 3 ingredients until they are browned.

Now, put your salsa in the fridge to cool, then serve!

Easy Peasy. Put this in tacos, burritos, eggs, on top of my chili with a kick ….the options are endless. Happy salsa-ing!

- 2 cup fresh or frozen corn
- 1 chopped poblano pepper
- 1 chopped red pepper
- 1 Tbsp olive oil
- Roast all ingredients in pan until crispy brown
